Random Acts of Pastry #5. Strawberry Lemonade Brownies or what to do with the leftover fruit?

As it is in life, all rules are made to be modified. Planning for this week’s bake involved thinking of ways to use the surplus of lemon juice that occurred from preparing a batch of Limoncello. Limoncello starts with the zest of 18 lemons and a goodly sum of vodka. This leaves the lots of leftover juice. In discussing this with Mrs. Cracker, she found a nice recipe that unfortunately was not in the Joe Pastry collection. It’s called a Lemon Brownie. Think of a lemon bar, but with the chew of a brownie. Lemon, butter, sugar, eggs, more sugar and more lemon. That’s pretty much the recipe. Once baked, you top it with a lemon glaze. In this case though, I decided to get a bit more summery and added some homemade strawberry flavoring to the topping. The end result was sweet and intense in it’s flavor. Cut into very small squares, the goods were delivered to this week’s nominee.
The folks at Southwestern Community Services chose Feeding Tiny Tummies to be this week’s recipient. Feeding Tiny Tummies provides food for kids and families in the area. One of the cool things they do is to provide bags of food on Fridays for kids to have something to eat over the weekend. Really cool stuff they do. When they were notified, the immediately chose the next recipient. With that information in hand, what to bake next?
