Dill Cracker

When we floated the possibility of making a Dill Cracker, we were met with lots of enthusiastic responses.  People who like dill tend to REALLY like it.  Dill has been used in cooking since the Middle Ages, and has a distinctive smell and taste that speaks of gardens and fresh food. In making this cracker, we added a  bit of lemon to fill out the flavor and added a wee bit of pucker. It goes great with smoked salmon, a little creme fraiche with thinly sliced cucumber, or a nice egg salad if you are so inclined.  We also suggest trying it with a slice of strawberry.  It pairs well with white wines, especially the following:

Chardonnay, Chenin Blanc, Pinot Grigio/Pinot Gris, Riesling, Sauvignon Blanc, Viognier.
